Ingredients

For Batter:

Raw rice-1 cup
Parboiled rice-1cup (Puzhungal arisi)
Urad dal-hand full
Methi seeds-1/2 tsp
Coconut water- 1/2 cup
Baking soda-pinch
Salt

For Coconut milk

Coconut -1 /2
Elachi- 2 no crushed
Sugar- As required

Method

1.Combine all the ingredients for batter preparation except coconut water,baking soda and salt..Soak overnight or 4 hours and grind watery.Allow it to ferment for at least 8-10 hours.
2.Let us prepare coconut milk now. Grind the coconut scraps.Add water after two grind.Now again grind until coconut is completely grinded. Filter the coconut milk and take the first milk. Add sugar and elachi. Keep aside.
3.Now will prepare aapam. Take the fermented batter and add coconut water,salt and baking soda.
4.First coat the aapam pan with oil using the cloth. Keep in medium flame now.Pour the batter in center and by holding the two side of pan just rotate the pan in such a way it gets round shape.Close the lid.
4.After it gets cooked take and serve with sweetened coconut milk.


Note

Don't skip coconut water. It gives softness to the aapam. U can also use coconut scraps while grinding batter for softness.
